Shortbread

250g Plain flour

75g caster sugar

175g butter

1. Heat oven to 160°C, 325°F, gas mark 3. Grease a baking tray.

2. Mix flour and sugar in a bowl, rub in butter.

3. Knead well to form a smooth paste

4. Roll out mix until about 1cm thick. Cut into fingers.

5. Place onto a baking tray and bake for 30 minutes until pale and golden.
