Victoria Sandwich

100g butter

100g caster sugar

2 medium eggs

100g self-raising flour

Jam

Whipped cream

1. Heat oven to 180°C, 350°F, gas mark 4. Grease 2 18cm cake tins.

2. Cream margarine and sugar until light and fluffy.

3. Beat in eggs, one at a time, adding a little flour with each.

4. Gently fold in remaining flour.

5. Divide mixture between the 2 tins and bake for 20-25 mins.

6. When cool, spread jam and cream over one half and place other half on top.
