Fruit cake

350g dried mixed fruit

100g caster sugar

100g butter

150ml water

1 egg

225g self raising flour

1. Heat oven to 150°C, 300°F, gas mark 2. Grease an 18cm cake tin.

2. Place fruit, sugar, butter and water in a pan and simmer slowly with the lid on for 20 minutes.

3. Allow to cool, then add the beaten agg and stir in the flour.

4. Pour mixture into prepared tin and bake for about 1 ½ hours
